When I wasn’t updating Steer Me Right’s events calendar or harassing my kids to get on with school today, I made my first beef stew in pretty much forever. I used the slow cooker, and dinner was a dubious prospect during this afternoon’s high winds. The power managed to hang on, so hats off to my slow cooker – we can eat after all!
Ingredients
1 ½ lbs beef stew meat, cubed and tossed in flour
1 bay leaf
¼ red cabbage
2 carrots
1 yellow onion
1 parsnip
½ turnip
3 zucchini
1 can beef broth
Worcestershire sauce
3 cups filtered water
2 tbs potato starch
Procedure
Toss beef in 1/4 cup of flour and a little salt.
Brown beef in grape seed oil, in a Dutch oven or large pan. If your slow cooker has a browning unit, use that.
Peel and chop veggies.
Combine beef and veggies in slow cooker. Add broth, Worcestershire sauce, and bay leaf.
Cover and cook on low all day.
Dissolve potato starch in 1/2 cup filtered water. Turn slow cooker to high and stir in potato starch to thicken for a few minutes. You could also use flour, but potato starch is a much quicker and smoother thickener – easier to use.


I have been meaning to make a hearty stew with this weather but hadn’t gotten around to grabbing a good recipe. Thanks we will be trying this in the next few days.

So Lisa, why dust the meat? or are you using a non-gluten flour? And I’m now using a bit of Arrowroot for gluten-free thickener.
After seeing this entry I subconsciously bought stew meat. LOL, we haven’t had stew this year, yet …but although I have used all those yummy veggies in stew for added nutrition, flavor, and COLORS, I only have carrots, sweet & white potatoes. Maybe I can stop at the store for red cabbage too!

I dusted it with gf flour. Not sure why, to be honest! I’ve never tried Arrowroot, but I’ve heard that’s a good thickener, too. I know – I wanted to add potatoes but didn’t have any. I guess the best stews are the impromptu ones that include whatever’s in the fridge, lol!

Mmmm…I don’t usually put that much variety of veggies in my stew, but this recipe makes me think I need to shake things up! I take it the potato starch is in place of actual potatoes, but do you think you could put real potatoes in instead and get the same result?

No, the potato starch is strictly a thickener. You could add potatoes. I would have, but I didn’t have any. If you don’t thicken with potato starch, you would want to use regular flour. I try to avoid gluten, and also potato starch seems to thicken things a lot more quickly than flour. Flour can also be lumpy.
